Real Deal

So on my journey of Culinary School there is also the personal side of it.

And this post is regarding that side, not what i made in school.  Although it does have to do with school.
Today we went on a feild trip, we started off with a tour of granville island and more in depth of the market.
Then we had a tour of the Sheraton Wall Center, all the undergroud and back kitchens. and finished off with getting Gelato and a speech from the owner about what he has done and why.

I can admit that my biggest enemy is myself.
I am constantly doubting myself, saying that im not good enough for certain things, putting limits on what i try to achieve. But Who am i to do that? What right do i have to stop myself from trying things?

I am scared. Scared of what people will think. Scared of the outcome. Good. And Bad. Scared that things wont turn out. Or what will happen if they do.  Scared of standing out and not blending in

I have always been okay with being average. being normal.  But am i really? What makes me not good enough to be great?  Everyone can be great in their own way if they try.



            A journey of a thousand miles, starts with a single step.



My journey has felt like i have been taking leaps lately! Moving to another city, heck another province! Living on my own, surrouded by people i didnt know, discovering who i am. Truly. 

Despite having people who are dear to my heart saying that i shouldnt do it, or that i will just flunk out i feel truly blessed with all the love and support from my family and close friends.
And to the few people who voiced their negative opinions to my face, me finishing this program and doing it well is the biggest smack in the face to them. and its going to feel awesome hah.


         When you dont give up , you Can`t fail.


What im learning is failure is good. If you are not failing then your not living.  I dont do well with failure. So Yes im baking in school, im reading the textbook, im learning all the concepts and rules. But im also learning how to live life.

Pie and Puff Pastry Week

These are some items that i have the most difficulty with!! Pies and i have a love hate relationship!

But i have survived this week and next week is a fresh week :)

Monday...
Pie Day...
did two different types of doughs. Flaky and Mealy. The difference between them is the size of the fat, which gives them different characteristics.

Onto Tuesday! This was mostly prep for wednesday. We made Classic Puff (or Traditional Puff), as well as Quick Puff (or Blitz/Rough Puff) Although we made one thing to take one. Quiche!!

I love Quiche! Although Dairy and i sometimes dont like each other i still eat quiche cuz i love it that much haha









My Partner and i made a Bacon, Spinach and Cheese One!! So delicious!! <3










So Wednesday.

We had made the dough on tuesday, which means that we did alot of different things on wednesday!
Vol Au Vent, Pithiviers, Jalousie, Napolean, Palmiers, and Cheese Straws... Yeah that was one hectic day!

      I also sprinkled a spice, i forget what but it made it have a bit of a kick, and i dont like spicy at all.










Onto Thursday!
Tart Tatin, Lemon Tarts, Chocolate Ganache Tart, and two different Almond ones.








Tart Tatin, this one played with my mind a bit. As depending on when you add the butter will affect the flavor!

If you added it sooner then it will be sweet, but if you add it later then its darker and more bitter tasting.  All Depends on what you are using it for.











Lemon Tart! I love lemon anything almost. But my tarts were not the greatest, wont deny it.













Chocolate Ganache Tart. If only i was a huge fan of chocolate haha











The first almond one was supoosed to be a pear almond tart, but we had no pears, so i made a plain one with blueberries.
















Second one has jam between the crust and the almond filling, and then a pretty lattice top :)

Choux Paste Day!




We made St. Honore, Eclairs, Profiteroles, Paris-Brest, and Gougeres




 
The profiteroles are the circular ones on the top of the St Honore.

The bottom is puff pastry and then pipe choux paste on it (in a certain desing) and bake it and then fill with cream and use caramel to glue the profiteroles on and drizzle on top.

It is kind of like a cream puff but with cheese baked into it.












This week was also a gingerbread competition. For the past couple of years our school has won so you got to decorate a cookie however you wanted to and then all the chefs got together and picked 4 people for the team.

Genie Did the green, white and red lined one is in my class and hers was amazing! she did little stars in lines! and they are like all the same height!  We are all SO proud of her and wish her all the best of luck!





Another exciting moment this week was everyone in my class knows about my chef crush on a few of the culinary students. Let me explain what a chef crush is for those of you who dont know. Chef Crush is that you are in awe and shocked about someones talents, You may or may not know them personally but enjoy their talent.I learnt myself what that was this week, so dont feel bad. This came about because im a picky eater and i had mentioned that i really like this one dish and the student making it shocked me because of it.
So Everyone in my class, including our chef instructor, knows about my chef crush.

Well on Friday our Chef was in the Main Kitchen and noticed that my chef crush had made swans and that they were so cute so she asked if she could take one because she has a student that has a chef crush on him.
Does this answer your question about if she got one for me?

Apparently his class was making fun of him about it. and my class makes fun of me for it.
The dish he made which made me develop this chef crush was some sort of pasta dish with a tomato sauce but it was a sweet sauce and there was bacon and vegetables in it. And im a plain noodles type of girl but i Loved this dish! Hence why i have a chef crush. lol



Onto Saturday!  first saturday that i had school. I had my first class of my WSET which is Wine and Spirit Education Trust.


I Tried 11 different wines







We had 3 different types of food to try with different types of wine.

 I learnt that i do not like wine.
Some were horrible. Some made my body shiver from how nasty they tasted.  One i actually drank.
So if you are wanting to drink wine for whatever reason. i would recomment Moscato d'Asti (which is the white wine on the left, pairs wonderfully with a lemon tart )

Anolther Week!

This past week was Cookie Week at School!

and there is a bunch of different types of cookies and then then in each type is a bunch of different kind of cookies.  Dropped, Piped, Cut out, Sheet/Bar, Sliced, Icebox, Stencil, Molded are all the different categories.

Monday was Bar Cookie Day!
We did Brownies and Date Squares, i totally should have brought some ice cream to school for the brownies! lol














And our Chef is always pushing us for more, as speed is required and an asset, so we also accomplished another practice of Croissants! Which came in handy with the leftover ham from thanksgiving :)


Tuesday was Sliced/Piped./Icebox Day,so we made Chocolate Vanilla Swirl,  Lemon Biscotti, Shortbread, Almond Spritz, and Madeleines.
I had the most fun making the Chocolate Vanilla Ones, As this was something that i have never done and i loved the outcome! They are so Fun!

I also realized that i dont like Biscotti, Anything that needs to be dunked in some sort of hot liquid to be eaten is never good in my books lol. but nonetheless some people really enjoy it.  Also learnt the secrets of dipping it in chocolate and then making it not have little feet (chocolate that is running down and then outwards)
The Shortbread and ALmond Spritz look very familiar but not the same taste. I dont really like shortbread. lol. Almond Spritz were delicious though!

Last thing we made that day was the Madeleines. The texture and taste of these remind me a little bit of vanilla cake. A Denser, less moist vanilla cake. Another one you would probably dip in coffee.

Wednesday! Well i loved this day. Tuiles and Rolled Cookies, Tuiles were difficult so say the least. Only reason i say that is because you have to shape some of them right when they get out of the oven so they are hot and i still have wussy fingers that dont like heat lol. We did 4 different kinds of tuiles, Almond, Cigarettes, Florentines, and Lace Nut.
 The one of the left is the Almond one but shaped like a Cigerette. And the two on the right hand sand is the cigerette.
This is the Lace Nut One, I found this one a bit interesting since once you take it out of the oven you shape it again and then let it cool and the parts where it wasnt supposed to be will just snap off.

The other ones broke on the transfer home :( but they were shaped like a U.

The other project we worked on this day was Gingerbread and Shortbread Cookies!!
I did not bring any of my cookie cutters out here with me so i went and bought some (Im loving that i get 20% discount)

I enjoy decorating cookies! Although i need to work on the little details.

























Finally Friday! Was all about Meringues and Macaroons. I am constantly surpirsed about how much i thought i knew about something but really that was just the tip of the iceberg. Im loving that i am learning the foundation of all the things instead of just being taught how to make it.

And this is the Swiss. ( swiss is glossier, but its kinda hard to tell in the pictures)

I filled my Cocoa Almond ones with a Vanilla Buttercream, and they tasted almost like a homemade oreo.
Coconut Macaroons is what people generally think of when they hear macaroon. This recipe was delicious though!!  and i made fun shapes :) a pyramid, heart and a box (although i may have eaten that one before taking the picture)

Persian Macaroons... i bought some from the bakery at my school before doing them in school and i didnt like them. although when i tried mine they werent too bad. so i may have not cooked mine long enough but i like them better that way lol.  Also then filled them with a bunch of different flavored buttercream ( Pistachio, Tiramisu, Chocolate, Vanilla, and Also Coffee )


You can really see how they look in this picture, mine turned out freaking fantastic!


You can also make them any color you would like, my one classmate, Aditi, made purple ones so i took a picture of them :)

We also made potatoe bread as Chef is really pushing for us to mulit task so having one extra project was the incentive for doing that. And it is Phenomenal!! I have already ate half the loaf lol 

Jess (another classmate) reworked the recipe as the hydration wasnt quite right and then made it a double hydration bread.It turned out Wonderfully!

Well that has been my exciting week! Hope everyone had a good week and ate lots of turkey leftovers!

Thanksgiving!!

Hey Everyone! Sorry i havent posted anything this whole week! we had a test on thursday so i was busy rereading my text and going through notes to make sure i understand everything. And it did pay off as i tied one other girl for the highest mark in the class!! :D

But without further ado i will tell and show you what i have been doing this past week!

Monday we did Croissants and Danishes again. And well This time my Croissants turned out more like brioche :(
But i definately more pleased with how my danishes turned out this time. This lamintating process is still not something im comfortable with but im determinded to nail it!

Tuesday we did brioche, Hot Cross Buns and Kugelhopf!
With the brioche dough i made bee-stings, Sticky Buns, and just buns.
I filled my Bee-Stings with pastry cream,and they had struesel on top,  they were soo good!

And the last thing i did with my brioche dough was just to practice my bun rolls.
    I like the awareness ribbon that i did, can you see it? lol

Like i mentioned earlier we also did hot cross buns. and this were interesting, as i have always wondered how they got the lines across but didnt not enough to google or learn on my own but now i know!

Last thing we made that day was the Kugelhopf!  but i forgot to take a picture so it kinda got squished on my way home.. oops. lol.

Wednesday! We did Stollen, Scones, prep work for thursday, and just a general review as the test was the next day.

Stollen was fun to make. You have to wrap baby jesus in a blanket and then make mick jagger lips|!  Yes that is how i know how to do it. No it was not actually baby jesus. No it was not a real blanket. It was Almond paste in dough but still kinda the same concept and the history of it makes it legit. lol.

Scones, are my not my favorite thing haha. First ones i did i made too thin, tasted fine but not something i could sell. and then second time i made them too big. I need to learn middle ground, im too extreme! lol

But i made Chocolate Walnut ones and then Cheese ones.

Thursday was the big day! Wrote the test, thought it went alright and then talking to people afterwards i thought i totally bombed it! i get super nervous writing them and then second guess myself and usually change my answers, so i couldnt remember how i answered a few of them and that is what scared me but i did well :)
Then we made Bobka, Banana Bread, Muffins And Corn Bread.

Bobka, was kinda fun to make, it kind of looks like a cinnamon bun but then put into muffin tins and struesel on top.

Banana Bread, I have never made but i do enjoy to eat! Well i kinda messed mine up. I didnt mix it quite enough so it had little flecks of flour in it, but still tasty!

Muffins! Welcome to cunningham muffins! haha ( if you have no idea what that is from i suggest you youtube muffins, such a weird but awesome video)
I Made Blueberry muffins, and an applesauce muffin.

These are the applesauce muffins, They are alright but the tops are a little drunk looking to say the least. lol. 


:( i forgot to take a picture of my blueberry muffins but Chef said they were wonderful! And they were Delicious!

Corn Bread.. Well mine was not fully cooked :( so i had to throw it out cuz eating it would make you sick, but I did take a picture of it!

Friday!! This day was so fun! I got the song Barbra Striesand stuck in everybody`s head and then Later on someone made a joke that me and this other girl from saskatoon was going to go smoke up in the back alley and I said no secretly we were snorting crack and then they were like but your not from Regina...  muahahha we have taught them well.
But we seriously did work out butts off this day! We did Chocolate Chip Cookies, Peanut Butter Chocolate Chunk Cookies, Oatmeal Raison Cookies, A potato Bread Loaf, And another Practice of Croissants!
My Partner has never made cookies before, He just did the culinary Program. But i have a lot of practice making cookies so i helped him out and he did 2 out of the 3 and they turned out awesome!
Since i helped him out we just did ours together so this is his and mine.









































Next was the Potatoe Loaf, And we tried out stenciling for the first time. I love it!

And Croissants. Like i said earlier I have not mastered the Laminating process. First time turned out amazing! Second Time i made it into Brioche. Third time is a charm? Nope! I scaled!! That means that the butter in between my dough broke up into chunks instead of rolling out nice and thin...  But i caught it early enough that i think i fixed it. But still not my best friend lol

And i made a bunch of tiny ones instead of the size the school sells as then i had more practice rolling them up :)

Well that was my week! Hope Everyone else had an awesome week! It's Thanksgiving weekend! You know what that means! Lots of turkey!! So excited!
